Why does me cat eat catnip?

I have 3 cats. 2 sniff it and one eats it. Is it ok for him to eat it and why does he eat it?

It is safe for a cat to eat catnip. And there is something in the herb that cats like, and causes them to act weird and roll around or rub themselves in it.

Catnip is kitty Weed.
It's ok for them to eat it.  Just like the real thing, ingesting it gives better results.
